Stir Fry Rice is a Simple and Effective

Stir fry rice is a simple and effective way to get every thing all cooked in just one go. To do this properly you must not cook the rice . Soak the rice and then cook it in a Wok , this is the best way I think you will find.

You will need

4 chicken breasts skinned

170g/6oz basmati rice

1 onion

1 garlic clove

2.5cm/1in piece of root ginger

1 red chili

½ tsp ground turmeric

Splash of vegetable oil

A dash of sesame oil

2 pieces of lemon grass

290ml/½ pt chicken stock

Slat and pepper to taste

You can add more vegetables to this if you like or just stick to the basic recipe. It all rather depends on you , as long as you follow the basic rules then you should have some success.

With a stir fry you are best getting everything done in advance as the cooking is very rapid. So dice your chicken and slice your onions and any other vegetables if you are using any in advance. Make sure that you garlic, ginger, and lemon grass are crushed and that everything is ready to go. But while you are preparing everything take your rice and let it soak for about half and hour or so.

When you have everything ready then drain your rice and get rid of as much of the water as possible . If you put it in the wok with a lot of water you will get a flash of hot oil and water and probably a very bad burn, and you do not want that.

Heat your wok so that it is very hot. Now add you vegetable oil and sesame oil. Just a splash of sesame oil as it gives it a real deep back note to the rice.

Now add your chicken and cook that till it is ready and remove it from the wok . Place on a plate and keep warm with another dish over it.

Now add your rice to the wok with your onions . Cook till the rice starts to look a little opaque. Now add you chopped or crushed garlic , ginger, lemon grass, chili and turmeric. Let the spices cook with the rice to start to get all the flavours in to the cooking.

Now add the chicken stock and bring to the boil. Once all the rice is almost cooked then add the chicken back to the wok and season with salt and pepper.

It is simple fast and all done in just a few minutes. What more could you ask for .
